Recipe: Plain ol' Vanilla Cupcake with Peanut Butter Cream and Honey

Made some cuppy cakes on sunday night! Boyfriend loves peanut butter so I made these:

 Plain ol' Vanilla Cuppycake [This cupcakes are super moist, Yums!]

Ingredients: 2 1/2 cups all purpose flour, 2 cups sugar, 2 1/2 teaspoons baking soda, 1/2 teaspoon salt, 1 tablespoon vanilla extract, 2/3 cup oil (vegetable, canola or peanut), 2 teaspoons distilled white vinegar and 2 cups water. 

In a large bowl whisk together all the wet ingredients. In a smaller bowl whisk together all the dry ingredients. Add half of the dry ingredients to the wet and whisk until just combined, repeat with the second half. 

Pssst. The batter will be very wet, and liquid-y. Fill cupcake cups with batter so cups are 2/3 full.  Preheat your oven at least 30 mins before baking at 250 C Degree. Bake in a preheated oven to 200 C degree. Bake for 22-25 minutes until a toothpick inserted in the center comes out clean. 


Peanutbutter, buttercream

1 Stick soften butter, 1/4 teaspoon vanilla extract and 2-3 cups icing sugar.

In a bowl cream together the butter and vanilla extract. Add the powdered sugar, 1 cup at a time, and mixing in between until you have the perfect frosting consistency, then mix in half a cup of peanut butter.

After the cupcakes cools, pipe on the peanutbutter cream and i left a small "O" in the middle and drizzled honey in the center.
